Do new recipes scare you too?

As I continue on my quest to find thee most flavorful, simplest, antioxidant packed, low inflammation recipes for the Back 2 Bliss Back Pain Protocol recipe list & meal plan…..I just had to STOP to share this one with you.


My cousin, who is an internal med doctor in Las Vegas - and has a vegan lifestyle - shared this with me a few months ago and I finally got up the ‘courage’ to try it.


Honestly- I have to admit - it takes courage for me to make a new-to-me recipe.


In my head this is what I hear:

“It will take too long”

“New is scary”

“Looks too hard - stick with the easy recipes you know”

“I’m not sure if I will like it”


And pretty much EVERY time I actually take the plunge and make a new recipe (whether I like it or not) my brain says:

“That didn’t take as long as I thought”

“New is exciting”

“It wasn’t as hard as I thought the recipe looked”

“How would I have known if I liked it if I didn’t even try?”


So before you even read this recipe and have the same apprehensive thoughts that I had….just try it -- OR use this as motivation to try a different recipe that you have been putting off to try because you have thoughts that don’t serve you.






Lentil Tacos with Mango Guacamole:

(Makes 4 servings)


Mango guacamole Ingredients:

2 ripe avocados, cubed

1 ½ cup ripe mango, cubed

14/ cup red onion, diced

½ cup cilantro, chopped

Juice of a lime

½-1 tsp himalayan salt (to taste)


Taco Filling:

2 Tbsp coconut oil

2 roma tomatoes, diced

2 cups cooked lentils

4 leaves of kale (4-6 cups) torn into smaller pieces

2 tsp cumin

2 tsp chili powder

1 tsp himalayan salt

8-12 small corn tortillas (warmed in the oven, stovetop, or microwave)


Directions

Place the guacamole ingredients in a bowl and mash until desired texture is reached (I use a fork or potato masher)

Heat 2 Tbsp of oil in a large skillet on medium heat

Add tomatoes, cook until they are tender/mushy (approx 5 min)

Stir in the lentils and kale. Cook until kale is tende (approx 5 min)

Stir in the seasonings and add more salt if necessary

Fill each tortilla with lentil filling, then top with mango guacamole
